Have a friend who runs 100% vegtable oil in a old 237 R model in the summer . Has to run 50% fuel in winter . So far he has had to replace all fuel lines and the supply pump once , the oil eats at any rubber product but smells like a fast food joint.

Could be cracked head ,between the exhaust valves is common . Engine wont always over heat just because its leaking internaly also cracked liners happen sometimes , from heavy scoreing of piston skirts or broken rings ,over fueling etc. . Cracked block from not cleaning out head bolt holes , and low liner heights all possabiltys. -
Very expensive truck to work on , and hard to get replacment parts.

Egr delete is a no/no never heard of a turbo delete, if you mean a mechanical turbo in place of the variable geometry turbo I dont know of any one that makes one for the manifold you have on there. Also the a/c460 is suited for highway application not vocational . Good luck.....

Not cheap but you can do it , need new pump ,all throttle linkage change all gauges to mechanical, there are a few discussions on here somewhere about this.

If this is E-tec engine could be worn jake srews or defective jack housing pluger or in correct adjustment ,sticking solinoids. -
Those pipes are 5in have a set of 6 chrome and going to slam some mufflers in the forward half and install later this year.

I have side staxx on the side of my 2002 dodge 3500 and love it , when the rice burners pull up next to me at a lite I can fill there car up with black smoke . And this want a be trucker runs DOT ICC and log books .

Made A body pedals fit in a 69 polara convertable had a 440 4 speed od trans and 273 gears , sold it to stephens performance a few years ago . Very fun car to drive you could run 135mph in 3rd gear and 4th who knows ......

What oil grade are you using , had another company same problem because they were using thinner oil to make better fuel milage with changed back to 15/40 and all was good

There is a software fix for some of the oil psi issues, need to check oil pressure sending unit for leaking oil into wire harness also . Mack has a upgraded oil psi sensor migh want to replace.
