Low oil pressure light came on while driving and shut down the engine. No leaks, oil dipstick  showed full.

After I waited a bit I got the engine to start. Then I noticed the coolant was low, which it wasn't when I originally pulled over. Added 3.5 gallons of coolant and it kept going down, even while the engine was off.

I did notice a little splattering from the rear oil filter after I re-started the engine, but not continuously. 

I also have a fuel injector that needs to be replaced.

After you have checked your simple stuff the rad cap ect ! Most common issues on this subject are EGR Cooler Failing Second in line are the injector cups can cause this however usually also give other issues hard starting slow to start indicaters! Water pumps fail once in a blu moon similar but not the same symtoms with over heat . our first check would be the EGR cooler
